Blackberry Kuchen


Hello little bloggy blog-blog, so I have sort of been neglecting you lately as other areas of my life have been consuming most of my time and energy....

anyhow recently I discovered that The Grand Central Bakery has published a book of all of its recipes!

Today I went berry picking and so decided to use some of the


berries that I picked to turn into Blackberry Kuchen!!!!! using Grand Central's recipe!

Here goes....

BLACKBERRY KUCHEN

BATTER
1-1/2 cups of whole milk
1/2 cup packed light brown sugar
10 Tablespoons of unsalted butter
1 Tablespoon of active dry yeast
3 eggs
3-1/2 cups flour
1-1/2 t. salt

TOPPING
3 or 4 cups blackberries
1/4 cup brown sugar
4 tablespoons of butter

VANILLA GLAZE
1 cup of confectioners sugar
2 tablespoons of heavy cream
1 teaspoon of vanilla extract

Gently heat the milk, brown sugar, and 10 tablespoons of butter, until just warm (use saucepan or the microwave). Add the yeast and let sit for several minutes.
Crack the eggs and whisk, then add salt and flour and the above mixture. Mix with a wooden spoon until dry ingredients are just incorporated.
Put in a greased 13" by 9" pan (I halved the recipe and put it in an 8" by 8" pan), and let sit in a warm place for one hour to rise.


Next, put the blackberries, sugar, and butter on top of the mixture and bake at 350 for 30 minutes, then lower the temp to 325 and bake for 10-15 minutes, until the top is golden brown.



Drizzle the glaze over the warm kuchen and enjoy!!!
